Ingredients
1 chopped onion
2 stalks celery, sliced
2 cloves garlic, minced
1 chopped green pepper
1 cup sliced mushrooms
6 c. water or stock
1 c. barley
1 c. dry lentils
1 carrot, shredded
3/4 cup tomato paste
2 tbsp apple cider vinegar
2 tbsp soy sauce
1 tsp basil
½ tsp marjoram
salt and pepper
Saute vegetables until soft. Add water or stock, barley and lentils. Simmer for 20 min. Add remaining ingredients, simmer until barley and lentils are tender.
